Ipomoea batatas Bellevue PBR was bred to provide an orange fleshed, copper skinned variety with superior storage root shape, skin smoothness and disease resistance. And on top of that Bellevue is a most attractive variety due to its predominantely purple foliage. Bellevue is not sweet when freshly harvested and when baked the sugar content is slightly less than in Beauregard. The roots of Bellevue however have excellent storage qualities.
